Grown under the embrace of four solar panels where our vineyard sheep graze, our Pinot Noir is rooted above our geothermal system and blended with Chardonnay from our friend’s vineyard in Kaleden. Our family’s heart and the perpetual motion of organic farming are encapsulated in every sip, reflecting our dedication to the land and community.

TASTING NOTES
Pale gold in color with lasting, fine bubbles, this wine is a true celebration of elegance. The nose reveals a symphony of brioche, lemon, apple, and white blossom. On the palate, it is dry with bright acidity and a fine mousse, offering flavors of lemon/lime, apple, meringue, brioche, white cranberry, and floral notes. The creamy texture and very long finish make every sip indeed an indulgence.

WINEMAKER'S NOTES
Our first Traditional Method Brut was made with 69% Pinot Noir and 31% Chardonnay grapes and were gently whole cluster pressed. The juice was co-fermented, at cool temperatures, for an initial 16 day primary fermentation until fully dry. After aging for 3 months, the base wine was bottled and the secondary ferment was carried out in bottle, in the traditional method - a timeless technique. After 16 months en tirage, the wine was disgorged, with no dosage added.
